Gaye's Pinto Beans

Ever so often we are honored with a tasty treat at our meetings. If it is healthy, inexpensive AND tasty we share.

Pinto Beans

1 to 1 1/2 cups uncooked pinto beans - soak in water overnight

1 onion, chopped
4 garlic cloves, crushed
1/2 to 1 cup fresh cilantro, chopped
1 pablano pepper, chopped
3/4 tsp ground cumin
1/2 tsp ground coriander
1 can stewed tomatoes
2 cups beef, chicken or vegetable stock (just add to water you soaked beans in). At times I've used ham hocks instead.


Cook all ingredients for 2 hrs. or longer until beans are soft. Add salt and pepper.

These measurements are rough estimates as I really don't measure especially the cumin & coriander. I have a mocahete (spelling?) or crushing bowl and generally crush 1 tblsp of cumin seeds & add coriander. You may have to experience with the ground version. Adding too much, though, can ruin it so be careful.
