Parker Farmer's Market

Sunday, August 31

from 8-1 on Main Street
The Parker Farmers Market is one of the top 10 markets in the Denver Metro area and enjoys a huge variety of farm fresh produce, meat, bakery goods, honey and fresh cooked items as well as hand crafted items from Colorado Vendors.

At the end of the market some of the vendors would allow to fill a bag for $5.00. It was a good way for our moms to get fresh veggies for the family. You may have to ask.

food banks

you no longer have to live on one can of chicken noodle soup per day shared between the three of you for 2 months to save for a quart of milk or a bottle of Benadryl for your kid that is dying of bronchitis and mal-nutrition while your church looks down on you like a harlot.
Not bitter, just wiser and unafraid to call it what it is!

Where is the beef?

Over Thanksgiving some of us discussed food prices, nutrition and coupons.

One mom makes stock with chicken bones
(after the chicken/turkey is de-boned and cut up into meal size packages and frozen)
The bones are cooked in a stock pot with all of the onion peels and scraps, carrot scraps, celery scraps.
Broth is then frozen in ice cube trays to add as needed to dishes.
For quick consumption she adds a handful of noodles/rice, the remaining meat off the cooked bones and (be creative) some mushrooms? leeks? and voila you have a healthy meal.

Saute Cabbage with Tomato Paste, onions, garlic and Sardines, lots of black pepper and for me lots of cayenne pepper, and this is great over hot toasted bread or dumplings (which I make the dumplings homemade too with only flour, water and a little baking powder, then fry)...either way the sardines with cabbage dish is very tasty, healthy and economical

(we posted other very delicious meals on this blog over the years. just type in the label for your search)

Let me know what you think.

Coupons? you bet!

Extreme couponers will tell you pre-Thanksgiving is the prime time to stock up on food for the year. "Don't settle for anything less than half off, and expect even better," advises Teri Gault, C.E.O. of The Grocery Game, a money-saving supermarket sweep site.
Check for freebies at websites like Red Plum, where a list of giveaways at national chains are posted weekly. Another tech-smart trick: download the Red Laser app to your phone and use it to scan sides you really want to make. The app will pull up the price of your dish and then roll out a list of similar products by other brands that are less expensive.

Some food banks have a box to deposit and withdraw coupons by month of expiration - just a thought.

Thanks for all the Thanksgiving memories. We laugh till we cry, and we are still here to tell about it.
The turkeys did not get us down after all....

Gaye's Pinto Beans

Ever so often we are honored with a tasty treat at our meetings. If it is healthy, inexpensive AND tasty we share.

Pinto Beans

1 to 1 1/2 cups uncooked pinto beans - soak in water overnight

1 onion, chopped
4 garlic cloves, crushed
1/2 to 1 cup fresh cilantro, chopped
1 pablano pepper, chopped
3/4 tsp ground cumin
1/2 tsp ground coriander
1 can stewed tomatoes
2 cups beef, chicken or vegetable stock (just add to water you soaked beans in). At times I've used ham hocks instead.

Cook all ingredients for 2 hrs. or longer until beans are soft. Add salt and pepper.

These measurements are rough estimates as I really don't measure especially the cumin & coriander. I have a mocahete (spelling?) or crushing bowl and generally crush 1 tblsp of cumin seeds & add coriander. You may have to experience with the ground version. Adding too much, though, can ruin it so be careful.

Gay's tasty Lentil Soup

easy to prepare, good for the body, good for the wallet, good comfort food, good gift!

into a glass canning jar goes in the following order:

1/2 cup of green lentils
1 1/2 tea salt
3tablespoons dried onions
1/2 tea curry powder
1/2 tea garlic powder
1/2 cup red lentils
1/2 cup of dried apple pieces
1 tea of dried parsley

seal the jar and let it marinate for a month.

When you are ready to use it, simmer mix in 8 cups of water for @ 30 minutes. Stir occasionally. You can add turnips, carrots, potatoes, celery, leeks.... Serve with sour dough bread.

We are also sharing a pie secret. If you are having a problem with your pie crust, try 1/2 water and 1/2 pear juice
